- Preheat the oven to 170o C.
 - If using coconut oil melt and set aside to cool.
 - In a large bowl: whisk the eggs (or vegan alternative), then add the oil, the mashed bananas and mix.
 - Add the banana bread mix and mix. 
 - Grease a cake tin or line it with parchment paper (we use a 9”x4” tin).
 - Pour half the batter in the tin.
 - Mix the coconut sugar and ground cinnamon together and sprinkle the them on top of the batter. 
 - Pour the rest of the batter in the tin.
 - Bake for 45 min (or until a toothpick comes out dry).
 - Remove from the tin and let it cool on a rack before cutting.
